ITALIAN
SAUSAGE PASTA

Ingredients:

lbs. Red and/or White penne pasta, cooked according to package
directions

pound Italian sausage

tbsp. olive oil
2
cloves garlic
1
(28 oz.) can whole peeled tomatoes
½
cup diced red pepper
½
cup diced sweet onion
8
oz. Hautly crumbled Blue Cheese (two containers)
OR 8oz Hautly Extra Sharp White Cheddar
2/3
cup Hautly Grated Parmesan cheese, divided
Directions:
Lightly
grease a 9 x 13 baking pan. Prepare pasta according to package
directions. Drain and return to pan. Brown sausage, drain
well.
In
large skillet over medium flame, heat olive oil, add garlic
and onion. Cook until onion and garlic begin to brown. Add
tomatoes and peppers, simmering until sauce begins to thicken.
Break tomatoes apart with spoon while cooking. Stir in cooked
sausage and 1/3 cup Hautly Parmesan cheese to sauce. Pour
over cooked pasta and blend.
Pour
into baking dish, spreading evenly. Add Hautly crumbled blue
cheese and remaining Parmesan, sprinkling over top.
Preheat
broiler, placing rack 6 inches from broiler element. Place
baking dish under broiler for a few minutes until cheese begins
to melt.
