Ricotta Spinach Roll
Ingredients:
4 sandwich
rolls
4 slices Hautly provolone cheese
15 oz. Hautly ricotta
3/4 cup shredded spinach
1 Tbsp. roasted garlic
1/2 cup
chopped portabello mushrooms
1/4 cup red pepper chopped
fresh basil leaves
salt and pepper to taste
Directions
Heat oven to
450ºF. Slice the rolls in half horizontally. Scoop out the centers of the top and bottom of rolls. Place a slice of
provolone on the bottom half of each roll. Mix together the spinach, garlic, mushrooms, red pepper and ricotta. Place half
the mixture on each bottom half. Top with fresh basil leaves. Place top roll on sandwich, wrap in foil and bake for about
20 minutes. Outsides should be crispy. Let cool 5 minutes. Slice in half and serve.
Note:
For a meaty sandwich add 1/2
cup browned sweet Italian sausage and 1/2 cup chopped pepperoni.
