Ricotta Fruit Dip
1 container (15 oz.) Hautly Ricotta Cheese, part skim or whole milk
2 tbsp milk
3 tablespoons sugar
½ teaspoon cinnamon
Assorted fresh fruits for dipping. Note: Add a few crushed strawberries into the mixture for a pretty pink color!
Place cheese, milk, sugar and cinnamon in small mixer
bowl. Beat on high speed about 3 minutes, scraping bowl occasionally. Cover and chill 1 to 2 hours. Serve with fresh fruits.
Fill phyllo dough cups with ricotta mixture and top with cherries or strawberries.

2 kiwi, peeled and sliced

To serve, place a layer of cheese mixture in each of 4 parfait glasses. Place a layer of strawberries and a layer of sliced kiwi over cheese. Repeat layering. Garnish each glass with a whole strawberry.
Refrigerate up to 1 hour before serving. Makes four servings.
