Orange Ricotta Spread with Figs
Ingredients:
7 oz. Hautly part-skim ricotta cheese (about 1/2 of the container)
1 cup finely chopped pitted figs (about ½ pound)
1 Tbsp. finely grated orange rind
2 Tbsp. fresh orange juice
½ tsp. cinnamon
Directions
Combine all ingredients until well blended. Chill. Serve on whole grain english muffins. May be stored in the refrigerator for up to two weeks.
