Hautly St. Louis Style Cheesecake

Ingredients:

1 lb 6 oz Oreo cookies
? processed to fine crumbs
4 oz melted unsalted butter
2 lb cream cheese
15 oz Hautly Ricotta Cheese
1 lb granulated
sugar
2 oz corn starch
Finely grated zest of one lemon
4 tsp. of pure vanilla extract
4 eggs
8 egg yolks
6 oz sour
cream

Directions

Preheat oven to 350°F.
Combine Oreo cookie crumbs and melted butter. Press evenly over the bottom of the greased
cake pans.
On low speed using the paddle attachment mix cream cheese, ricotta and sugar until smooth. Blend in the corn
starch, lemon zest and vanilla. Add eggs and egg yolks a few at a time, blending thoroughly and finally incorporating the
sour cream. Pour the batter into the pans. Bake at 350°F for 50 minutes. Let cool for 20 minutes and then refrigerate for
4 hours.
Remove from pan and slice. Serve with fresh berries.

Makes two 9? cheesecakes.
