Caesar Dressing
Ingredients:
15 oz Hautly Part Skim Ricotta
½ lemon, peeled
1
oz anchovy fillets
2 oz celery
2 oz onion
½ cup mayonnaise
1 tsp. black pepper
Directions
In a food processor, at medium speed,
blend together lemon, celery, onion, anchovies, and black pepper. Blend for 1 minute to make a paste. Add vinegar,
mayonnaise, and Hautly Ricotta cheese. Continue to blend for 2 minutes. Place the dressing into a covered container and
refrigerate overnight before serving.
Tip : Makes ¾ quart. Keep up to two weeks if well
sealed.
