Baked Zucchini Boats
2 medium size
1 shallot, minced
1 clove garlic, minced
1 tsp. fresh basil, minced
1 Roma tomato, diced
8 oz Hautly
Salt and Pepper
Preheat oven to 300 ° F.
Wash and cut off the ends of
the zucchini. Split lengthwise. Scoop out the middle of the zucchini, making a U shape. Cut the halves into 2 inch pieces.
Mince the scooped out portion of the Zucchini.
Heat a small amount of Olive oil. Sauté shallots and garlic first. Then
add tomato, basil and zucchini pulp. Reduce heat and season to taste. Cook until mixture reduces moisture. Remove from
heat and let cool in a small mixing bowl. Add shredded Mozzarella and mix well. Using a spoon, place the mixture into the
zucchini boats.Pack firmly.
Place on a baking sheet. Bake for 5-10 minutes.
