Red Tuna Melt

Ingredients:

6 oz tuna packed in olive oil, drained
1 roasted red pepper, chopped
½
onion, finely chopped
4 Tbsp. low-fat mayonnaise
2 tsp paprika
1 tsp Chipotle Sauce
1 tsp fresh lemon juice
Red pepper
flakes and salt to taste
8 slices bread
7 oz Hautly Gouda Cheese, shredded
Olive Oil for brushing bread

Directions

Using a fork
break up the tuna. Mix in all the other ingredients except for the bread and Gouda cheese to make a thick consistency.

Generously spread tuna mixture onto 4 slices of bread. Top with shredded Gouda and cover with remaining bread.
Brush
sandwiches lightly with olive oil. Heat a heavy nonstick skillet over medium heat and add the sandwiches. Lower the heat to
medium, and cook on the first side until bread is crisp and golden, then turn over and repeat.

Serve
immediately.
