Onion Portobello Sandwich
Ingredients:

medium Vidalia onion, finely chopped
5 portobello mushrooms, stems and gills removed
Olive oil
salt and pepper
7 oz
Hautly Smoked Gouda, coarsely grated
Directions
Preheat oven to 375ºF.
Over medium heat sauté onions until golden brown. Let
cool completely. Season and lightly oil the clean mushrooms. Char grill or sauté the mushrooms over medium-high heat,
turning so they do not burn.
Grate the Hautly Smoked Gouda and mix with sautéed onions. Place the stuffing onto the stem
side of the mushrooms, making an even layer. Season to taste.
Bake for 8-10 minutes. Cool for 2-4 minutes? slice like
pizza and serve.
Serving Variation: Serve whole on a hamburger bun with lettuce and tomato to make a mushroom
burger.
