Mexican Fajita
Ingredients:
16 oz mixed vegetables
(red or yellow peppers, corn, zucchini and onions)?1/4 cup fajita sauce ?8 (8-inch) flour tortillas ?1 cup shredded
chicken, cooked?3/4 cup Hautly Monterey Jack Cheese, shredded
Cooking Oil
Salt & Pepper
Directions
Lightly coat a pan with cooking
oil. Saute mixed vegetables for about 5-7 minutes.
On one half of a tortilla, layer chicken, vegetables, and cheese.
Fold
in half and serve.??*To avoid a soggy lunch, pack the tortillas in a seperate bag and assemble when ready to
eat.
