Beef Tacitos

Ingredients:

8 6-inch corn tortilla shells
4 oz grilled beef strips
4 oz Hautly cheddar or colby cheese
½ onion,
diced
Chipotle Pepper in Adobe Sauce or Tabasco to taste
Salt and Pepper
Cumin powder
Vegetable oil

Directions

Preheat oven to
375ºF.
Fry fresh corn tortilla shells for a few seconds to soften them. Drain and set aside. Sauté onion then add beef
strips, pepper, salt and cumin. Sauté until beef is cooked. Let cool.

Lay out fried corn tortilla shells, place
filling in the center of the shell. Top with Hautly cheese. Roll and secure with toothpicks. Bake for 5-7 minutes.

Serve
with salsa, sour cream and guacamole.
