Soup's On!
I can think of few things more calming than a brisk fall day with a pot of soup simmering on the stove. The aroma of sautéed vegetables in chicken stock and fresh baked bread signals the end of the workday and a chance to relax with the family around the table.
In reality, this doesn’t happen in our home on a daily basis. Rather, we hurry through a dinner most days-if we make it home at all between sports events and meetings. Often it’s too late to start a dinner, so we bring it home in a bag. (Since we don’t eat fast food, this is a real challenge!)
This week when the soup pot made it’s fall debut, I chopped and sautéed carrots, celery, onions and garlic for a hearty lentil tomato soup. Right before serving, I tossed in chopped kale and a sprinkling of parmesan cheese. Talk about a super-charged bowl of vitamins! Served with corn bread and honey butter, stories and laughter, we celebrated our brief moments of table togetherness.
