Souffle' Serenity
True confession. I am 49 years old and had never made a souffle?. Why I’ve been so intimidated by a simple little egg dish is baffling. After all, I’ve raised three boys, run half marathons, unclogged drains…daunting life challenges, but not so much as the sacred souffle. Of course, Julia Childs made it look so simple, whirling around from the oven with her masterpiece in hand.
So last night after reading my April issue of bon appetit, I checked Julia out online, then tackled it. New souffle dish in hand, Julia by my side, Do Not Slam note hanging on back door, and yes, glass of wine on hand in case Julia let me down.
For those of you unfamiliar with souffles, you basically make a yolk mixture and fold a whipped egg white mixture into it. Of course, I made a cheese souffle, so it also included a leftover aged comte? (Julia would have appreciated my gruyere substitute, especially since it was hanging out in my fridge a bit too long).
I was so excited when I turned the oven light on (you can’t open the door or you risk serious collapsing issues) and discovered a less than perfect, slightly slanted, fabulously satisfying masterpiece.
